We tried a new recipe this week. In our home that can be a dangerous thing, since that means someone might go to bed hungry. In this case, we had tremendous success.
I enjoy cooking and like to try new recipes, but since having children new recipes has become a bit of a lost art form in our home. We try to expose the children to different foods, but sometimes we fall into comfortable routines, especially during busy weeks of ballet, soccer, and girl scouts. This week I tried a new recipe that I read about on a friend’s blog and we all loved it.
I am willing to share my recipe, but I have a question for you… what are you cooking this weekend? Tell me what you are cooking this weekend and maybe I will find more motivation to try something new. My family will thank you, I promise!
Roasted Sausage with Tomatoes, Onions, and Garlic
6 sweet Italian sausage
6 small fresh tomatoes
1 onion, cut into large dice
4-6 garlic cloves, sliced
2 tablespoons olive oil
1 tablespoon Balsamic vinegar
1 1/2 teaspoons dried thyme
2 bay leaves
salt and pepper
Adjust oven rack to lowest position. Heat oven to 425′. Mix all of above in large bowl and put in 9×13 pan. Roast, stirring once after 30 minutes, till sausages are brown and tomatoes are reduced. Total cooking time is 50 minutes.
Serve with mashed potatoes or just a green salad and bread.
